Recently I decided to replace my kitchen knives; they were passed on to someone who would make good use of them. They were replaced with 7 superb Japanese kitchen knives: butcher's knife; a cleaver and 5 other treasured knives. They really are superb and, very sharp - a sharpness that will last a long time. I have two different sharpeners [plus holder] on hand in case any need resharpening. Kitchen knives are the type of utensil that are used every day over many decades so need to be taken good care of.
